Warm spelt salad with shrimp

The fame of the Italian cuisine depends not only upon the delicacy of the dishes themselves, prepared with skill and with quality products, but also upon the way it expresses the significance of a good life. We bring our housewives today a wholesome, easy and a simple to make italian salad which uses vegetables as well as shrimps. You can add your own choices. This salad is made for 4 servings and takes just 40 minutes to prepare.

 

What we need,

 

  •  150 g of spelt
  •  12 shrimps
  •  100 g carrots, cut into small dice
  •  100 g zucchini cut into small dices or you can use cucumber
  •  100 g tomato peeled, seeded, and diced
  •  50 g peas
  •  50 g red onions finely chopped
  •  1 teaspoon of minced fresh parsley
  •  6 fresh basil leaves, torn
  •  50 ml extra virgin olive oil
  •  salt and pepper

 

How to Prepare,

 

Firstly Bring a small saucepan of salted water to boil. Add the peas and cook them until they are tender. Drain and rinse the peas under running cold water. Heat 1 and a half tablespoons of the oil in a skillet over medium heat. Add the onion and cook, stirring, until it is tender. Now add the zucchini or cucumber and carrots and season with salt and pepper. Cook until lightly browned but not softened. Add the blanched peas.Remove from the heat. Next boil the spelt in salted water, strain it and put it in a bowl. Add the cooked vegetables, tomato, parsley, and hand-torn basil leaves. Drizzle with olive oil and salt to taste. Sauté the shrimp in a bit of oil and serve them with the spelt salad. Now add this salad to a bowl and serve.
